Biography
Penny is a nutrition biochemist and dietitian scientist, holding a Master of Science in Dietetics and Nutrition, with a specialization in nutrition biochemistry and is a licensed and Registered Dietitian. Her research interests include pre- and type 2 diabetes, cardiovascular disease, and obesity and what these conditions have in common so they can be treated synergistically and more efficiently at the individual and population level. Additionally, Penny is also interested in dietary components and interventions that work to prevent, improve, or worsen these conditions. Being that cultural and ethnic background play an influential role in disease prevention and management, she considers research in these contexts. Penny's specialty and passion lie in being the bridge between nutrition science and public health, receiving numerous community and industry awards and recognition for her initiatives and involvement in the communities she serves. Inspired by her diabetic past, having been diagnosed with prediabetes at the age of 12 years old and reversing it one year later, Penny is passionate about finding evidence-based and culturally-tailored dietary solutions in addressing the diabetes and chronic disease epidemic. Having varied clinical and community experience, she has been invited to speak in corporate and hospital sectors but also enjoys giving back through philanthropic community presentations to low-income and minority communities that are among those at highest risk and prevalence of diabetes, cardiovascular disease, and obesity. With a growing international community of over 10,500 followers, Penny also enjoys mobilizing social media such as Twitter (@pbroo003) as a means to provide evidence-based information and research to layperson communities who are interested in preventing or better managing these conditions. Recently, she has served as a consultant to the Florida International University (FIU) Marketing Department (part of the FIU School of Business) to create and develop the first nutrition curriculum component for their Health & Fitness Marketing Certificate program. And currently, Penny is engaged in an invited appointment at FIU where she is an independent consulting researcher working in cross-cultural dietary assessment research.
